AVOCADO, CRAB & CORN FRITTERS WITH AVOCADO MANGO SAUCE

Ingredients

  • 1 shallot, peeled and finely minced
  • 8 Tbsp.unsalted butter
  • 1 Tbsp.all purpose flour
  • 1 Tbsp.baking powder
  • 2 eggs, slightly beaten
  • 1 lb.lump crab
  • 3 scallions, thinly sliced
  • 1 cupcorn
  • 1 ½ ripe, Fresh California Avocados, 1 inch diced
  • 1 lemon, zest of
  • 1 Tbsp.chopped fresh dill
  • 1 cupbread crumbs
  • salt & pepper to taste
  • oil for frying
  • Avocado Mango Sauce

  • 1 cupmango puree
  • ½ cupripe, Fresh California Avocado, 1 inch diced
  • 1 tsp.rice wine vinegar
  • salt & pepper to taste

Instructions

Avocado, Crab & Corn Fritters

  1. In a medium size sauce pot, heat oil to 375 degrees.
  2. In a small sauté pan, sauté the shallots in the butter until translucent.
  3. In a mixing bowl, mix the sautéed shallots with the remaining ingredients. Form into small balls.
  4. Slowly drop a few of the crab-avocado balls into the oil and fry until golden brown.

Avocado Mango Sauce

  1. Puree all ingredients in a blender and reserve for service.

Dont let it be bland!
Overall the recipe is good but I doubled the amount of shallots and added garlic powder and cayenne pepper to properly flavor the mixture. I would skip adding the avocados in the fritters and just use them in an avocado puree or avocado mango sauce.

Incomplete instructions
The instructions are incomplete. #1 refers to part of the list of ingredients. #3 is the first 2 ingredients, and I assume the last 4 ingredients are for the sauce.
If you follow your instructions-everything is in the blender and done. My question is, what goes into the blender?
