California Guacamole made by Elizabeth Hass, just the way Rudolph Hass, owner of the original Hass Avocado tree, loved it. Simple, tasty and full of California Avocados.

Ingredients

  • 4 ripe, Fresh California Avocados, seeded and peeled
  • cupdiced white onion, (diced 1/8-inch)”
  • tsp.salt
  • 8 celery stalks

Instructions

  1. Place half of the avocados in a bowl and coarsely mash with a fork.
  2. Dice the other half of the avocados and add to the bowl.
  3. Add onion and salt.
  4. Stir briefly to create a chunky guacamole. and serve.
  5. Cut celery into dipping-size sticks. Put guacamole bowl on a tray and place celery sticks around the bowl; serve.

Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Serving Suggestions:  In addition to Mrs. Elizabeth Hass’s dipping favorite of celery sticks add fresh dipping vegetables like baby carrots, cucumber circles, red bell pepper and zucchini sticks.  For some zest and more chunks add the juice of a lime and a diced roma tomato.

Beverage Pairings: Delicious with fresh lemonade.
