Just beyond the famous coastal landmarks lie the rich inland valleys of California. Incorporating goat cheese and pistachios, this very California guacamole satisfies a regional preference for fresh and flavorful.

Ingredients

  • 2.0002 ripe, Fresh California Avocados, seeded and peeled
  • 0.500½ cup finely crumbled, chilled, fresh white goat cheese
  • 0.250¼ cup chopped, fresh cilantro
  • 2.0002 Tbsp. chopped, toasted pistachio nuts
  • 0.250¼ tsp. crushed red pepper flakes (or to taste)
  • 2.0002 large cloves garlic, finely chopped

Instructions

  1. Coarsely mash (DO NOT PUREE) avocados.
  2. Fold in remaining ingredients.

Serving Suggestions:
Serve with fresh vegetables for dipping.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.
