FRENCH GUACAMOLE

Ingredients

  • 4.0004 ripe, Fresh California Avocados
  • 1.0001 Tbsp. fresh lemon juice
  • 0.250¼ cup finely chopped shallot
  • 3.0003 Tbsp. dry vermouth
  • 2.0002 Tbsp. chopped, fresh tarragon (or 1/2 that amount dried)
  • 1.0001 tsp. salt

Instructions

  1. Coarsely mash (DO NOT PUREE) avocados.
  2. Stir in lemon juice.
  3. Fold in remaining ingredients.

Serving Suggestions:
Spread on slices of toasted baquette.

Beverage Pairings:

Try with your favorite French wine.

Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
