Instructions
- Heat beans, keep warm.
- Heat oil in pan large enough to fry tortillas. One at a time, fry in hot oil until crisp, using basket mold to make tortilla bowl. Drain on a tray lined with paper towels.
- Place turkey in sauce pan and simmer with water or chicken broth until liquid is almost gone.
- Add salsa; simmer a few minutes.
- Spoon dab of hot beans on each plate and set a tortilla bowl on top (beans help keep it on the plate).
- Spoon beans into the bottom of each shell.
- Sprinkle with half the cheese, then spoon on turkey mixture, lettuce, tomato, onion, olives, cilantro, more cheese, a dollop of sour cream and a generous helping of guacamole.
Award-winning Guacamole
- Mash avocado, keeping it lumpy.
- Stir in remaining ingredients.
