Marinated cooked chicken, peppers and onions are tossed with rice and Fresh California Avocados for a colorful cold salad.

Instructions
- Blend lime juice, oil, garlic, chili powder and salt in large bowl.
- Add chicken, red pepper, onions, cilantro and jalapeño peppers.
- Cover and refrigerate 2 to 3 hours.
- Add rice and avocado chunks; toss lightly, and serve.
Serving Suggestions:
Garnish with tomato wedges if desired.
Beverage Pairings:
Try with a glass of White Zinfandel.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
