Classic Caesar Salad plus delicious Fresh California Avocados.

(14-oz) can small artichoke hearts, drained and cut into quarters

ripe, Fresh California Avocados, peeled, seeded and sliced

Instructions
- Tear lettuce into bite-size pieces and chill.
- Prepare Caesar dressing by shaking all dressing ingredients together in a tightly covered container.
- Just before serving, pour enough hot water over egg to cover and let stand 1 minute; rinse under cold water.
- Pour Caesar dressing over lettuce in large salad bowl.
- Break egg into middle of salad; toss lightly.
- Add croutons, artichoke hearts, avocados, cheese and anchovies.
- Toss again and serve.
Serving Suggestions:
Top with grilled chicken or fish for a main-meal salad.
Beverage Pairings:
Nice with sparkling mineral water.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
To avoid risk of Salmonella, contamination raw eggs should be cooked to a minimum of 145 degrees F. If concerned, whisk a poached egg into the dressing instead.
