Fabulously rich and creamy with luscious avocado taste, this is a must-try appetizer for any occasion.

(26-30 count) cooked shrimp
Instructions
- Lightly oil a 5-cup ring mold; set aside.
- Soften gelatin in a small bowl stirring with cold water, about 3 minutes.
- Add boiling water, stirring until dissolved. Cool to room temperature, about 5 minutes.
- Meanwhile, in a medium bowl, combine avocado, onion and lime juice and salt.
- Add gelatin mixture, folding until liquid is well combined.
- Whisk mayonnaise and cream together. Fold into avocado mixture until well combined.
- Pour into prepared mold. Chill until set, about 3 hours.
- Turn out the avocado ring onto serving platter. Mound center with shrimp.
Serving Suggestions:
In place of shrimp, fit a small serving bowl into the center of the ring and fill with salsa. Serve with tortilla chips.

Icy cold brewery beers served in a chilled bucket with limes.
Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
double Devon dream, which comes in a small jar, can be found in the refrigerated case of most gourmet markets. This ultra-rich cream can be substituted, if needed, with pasteurized heavy whipping cream which has been stiffly whipped.
