Instructions
Pizza Dough
- Combine warm water, yeast and sugar.
- Let stand until yeast starts to foam, about 5 minutes.
- Place flour and salt in mixer bowl or bread dough maker. Turn mixer on and slowly add yeast mixture.
- Add the oil and knead dough 10 minutes.
- If necessary, add more water until the dough holds shape without feeling sticky.
- Let dough rise in warm spot until double in bulk.
- Punch dough down and let rest 15 minutes.
- Divide dough into individual portions. Form each portion into an 8-inch round.
Pizza Assembly
- Place eggplant in the center of the dough.
- Drizzle with half of the olive oil.
- Alternating tomato and asparagus, place on top of eggplant.
- Layer snow peas on top of tomatoes and asparagus.
- Set aside half of the ricotta cheese. Fill the center of each pizza with the other half of the ricotta cheese.
- Top with mushrooms.
- Sprinkle pizza with remaining olive oil and mozzarella cheese.
- Dot reserved ricotta cheese over pizza.
- Place pizza in a 400 degree F oven for 20 minutes, or until crust is golden brown.
- Peel and slice avocados. Top each cooked pizza with half of a sliced avocado.
Serving Suggestions:
Serve with a crisp green salad.

Pizza and beer are naturals; try with a rich lager.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
