Instructions
- Cook pasta according to package directions.
- Drain and rinse noodles under cold water until room temperature.
- Mix all other ingredients together with cooled pasta except 1/4 of the diced avocado and the shredded lettuce.
- Refrigerate until serving.
- Serve on top of a bed of lettuce, and garnish with reserved avocado.
- Lettuce can be eliminated and this dish can be served as a side salad instead of a main dish.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
