    English muffins, split and toasted
  • 0.500 ½ cup
    tomato sauce
  • 0.500 ½ tsp.
    dried oregano, crushed
  • 2.000 2
    chicken or turkey hot dogs, sliced 1/4-inch thick
  • 2.000 2 Tbsp.
    finely chopped green bell pepper
  • 0.500 ½
    small California Avocado, peeled, seeded and thinly sliced crosswise
  • 0.750 ¾ cup
    shredded non-fat cheddar or mozzarella cheese
  • 24.000 24
    pre-trimmed, peeled mini carrots

Instructions

  1. Arrange English muffin halves, cut side up, on a baking sheet.
  2. Preheat broiler. In a small bowl stir together tomato sauce and oregano.
  3. Spread mixture over muffins.
  4. Sprinkle hot dog slices and green pepper over tomato sauce layer.
  5. Arrange avocado half-circles over filling.
  6. Sprinkle cheese evenly over avocado and filling.
  7. Place 4 inches under broiler, watching carefully, just until cheese melts.
  8. Serve immediately along with the mini carrot "robots", allowing 4 per serving.
  9. Preparation time, 15 minutes.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
