ripe, Fresh California Avocados, peeled and seeded
Instructions
- Preheat oven to 450 Degrees.
- Heat the following until very hot.
- In a saucepan heat the chicken and sherry.
- Add celery, almonds, pimiento and the combined mayonnaise, lemon juice, rind, onion, salt and pepper, blending thoroughly.
- Fill avocados.
- Place in a pan, bake in very hot oven until lightly browned.
- Serve immediately.
- Baking time: About 15 minutes.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
