Instructions
Summer Fruit Salad
- Place apples in a bowl with lemon juice to keep from browning.
- Add all other ingredients. Gently mix fruit salad topping.
- Serve on top of hot waffles, with or without liquid syrup.
Waffles
- Sift flour, baking powder, salt and sugar.
- Add milk and egg yolks.
- Beat with a wire whisk until mixed.
- Slowly mix in melted butter.
- Beat egg whites until stiff.
- Fold into flour mixture.
- Pour into hot waffle iron and cook following appliance directions.
- Top hot waffles with Summer Fruit Salad.
Serving Suggestions:
Summer Fruit Salad is also delicious served alone or on top of pancakes, crepes, French toast and ice cream. Use frozen waffles when pressed for time.
Beverage Pairings:
Serve with your favorite breakfast beverages or sparkling wine.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
