A delicious Recipe from the Azzura Point restaurant at the Loews Coronado Bay Resort.

ripe, Fresh California Avocados, seeded and peeled

coarsely chopped cilantro

jalapeño chiles, minced finely

Salt and pepper, to taste.
Instructions
- Over medium heat, bring 2 quarts of water to boil.
- Stir in salt and add husked tomatillos.
- Cook for 10 minutes. Remove tomatillos from water and puree in blender; set aside.
- In medium mixing bowl, coarsely mash the avocados.
- Stir in cooled puree and rest of ingredients.
- Adjust seasoning with salt and pepper and serve.
Serving Suggestions:
Serve with crisp tortilla chips or vegetable dippers.
Beverage Pairings:
Nice with a frosty margarita.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole.
