Instructions
- Chicken Salad:
- Toss together first 6 ingredients.
- Serve on salad greens with Avocado Waffles.
- Avocado Dressing
- Process all ingredients in a blender until smooth, stopping to scrape down sides.
- Avocado Waffles
- Stir together first 4 ingredients in a large bowl.
- Stir together buttermilk, egg, and oil until blended.
- Stir in mashed avocado and garlic
- Add to dry ingredients, stirring just until moistened.
- Bake waffles in a preheated, oiled waffle iron just until crisp
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
