AVOCADO WITH MUSHROOMS AND STILTON

This makes a marvelous "starter" or appetizer.
Ingredients

ripe Fresh California Avocado, halved and "fan" sliced.

mushrooms, sliced

slices Stilton cheese, approx. 1/4" thick and 2" square

small microwave-safe ramekins or glass dishes

extra virgin olive oil
Instructions
- Heat the oil in a medium skillet. Add mushrooms and sauté until tender.
- Divide mushrooms into the dishes.
- Place a slice of the Stilton cheese on each portion of mushrooms.
- Top cheese with the California Avocado slices.
- Microwave only until the Stilton has begun to melt, about 45 to 60 seconds.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
