(3/4 ounce) packages arugula

Instructions
- Process 1 avocado and next 3 ingredients in a food processor until smooth, stopping to scrape down sides.
- Spread mixture evenly onto bread slices.
- Top half of slices with arugula and tomato; sprinkle evenly with salt and pepper.
- Cut remaining three avocados into slices, and arrange on tomato; top with remaining bread slices. Serve immediately.
- Makes 6 servings.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
