This recipe has been adapted from a very old Sifto Salt recipe booklet. It is absolutely the best Guac I've ever had!!
Ingredients

finely chopped onion

canned jalapeno pappers, finely chopped

chopped fresh coriander leaves (or 1 1/2 tsps dried or 1/2 tsp ground per 2 avocados)

ripe California avocados, coarsely mashed

tomato peeled, seeded and chopped

sift salt to taste

tbsp. fresh lime juice
Instructions
- Mix all ingredients together. Serve as a dip with corn chips or fresh vegetables. Also great as a topping for baked potatoes or burgers.
- N.B. Place an avocado pit in the centre of prepared guacamole to help prevent browning.
- Makes about 1 1/2 cups.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
