A great guac recipe with lots of flavor. A little rich, but it will go fast!
Ingredients

8oz pkg cream cheese - softened

large ripe tomatoes - peeled, seeded, diced

medium yellow onion - peeled, diced

medium green chile - diced

Instructions
- Place ripe, cored tomatoes in boiling water about 10 seconds.
- Remove from water, peel, seed and dice.
- Peel and dice onion.
- Dice green chile.
- Mix tomatoe, onion, chile, cilantro and 1/8 cup lime juice together.
- Chill while mixing remaining ingredients.
- Peel avocados. Dice and cover with remaining lime juice.
- Mix softened cream cheese and avocados to your desired consistency (smooth or chunky).
- Fold tomato mixture into avocado cream cheese mixture.
- Add the bacon bits and refrigerate for about 30 minutes, until bacon bits are soft.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
