One egg (optional)
Instructions
- Prepare a bechamel sauce as usual.
- Melt butter in a pan and stir in the flour.
- Pour the hot milk over the mixture till it thickens.
- Add a beaten egg if you wish.
- Put in your mashed California Avocado.
- Put also a cupful of grated cheese and beaten egg.
- Place in a baking tray.
- Top with breadcrumbs and grated cheese.
- Cook in oven for 25 minutes.
- Can be served cold with toast bread.
- Can be served with a green salad or tomato chutney.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
