You can almost feel the Caribbean ocean breeze with this fruit and coconut studded guacamole.
Ingredients
- 4.000 4 ripe, Fresh California Avocados, peeled and seeded.
- 1.000 1 Tbsp.fresh lime juice
- 1.000 1 cupfinely diced fresh mango
- 1.000 1 cupfinely diced fresh pineapple, well-drained
- 0.250 ¼ cupshredded coconut (unsweetened)
- 1.000 1 tsp.crushed red pepper flakes
- 1.000 1 tsp.salt
Instructions
- Coarsely mash (DO NOT PUREE) Fresh California Avocados.
- Fold in remaining ingredients.
Serving Suggestions:
Place guacamole in the center of a platter surrounded by sweet potato or plantain chips.
Beverage Pairings:
Serve with fruity rum cocktails.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole and refrigerate.
