Chunks of fresh pineapple and Fresh California Avocados combine in this unique guacamole that can also be served as a side dish.

red onion slivers
Instructions
- Slice the pineapple lengthwise into quarters. Peel it and remove the fibrous core. Cut the pineapple into 1-inch cubes and place in a salad bowl.
- Add red onion slivers to the bowl and toss lightly.
- Cut the avocados in half lengthwise, remove the seed and cut in half again. Carefully remove the skin and cut the avocados into bite-sized pieces. Add to the pineapple and onion mixture.
- Whisk together the olive oil, lime juice and salt; pour over the pineapple, onion and avocado.
- Serve and enjoy!
Serving Suggestions:
Serve with tostones (fried plantains).

Try with a chilled mojito.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.
