A delicious hearty and satisfying main dish luncheon salad served with hot crispy french bread.
Ingredients

California avocados, peeled, pitted and cut into wedges

cans solid pack albacore tuna, drained

olive oil

Salt and freshly ground black pepper to taste
Instructions
- In a large salad bowl toss together spinach, avocados and tuna.
- In a small bowl whisk together to emulsify olive oil, lemon juice, wine vinegar, salt and freshly ground black pepper.
- Toss gently into salad. Taste and adjust seasoning if desired.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
