To find a Frenchman, look for the freshly baked baguette tucked under his arm. Few Parisians manage to make it home without breaking off a chunk and enjoying the warm, yeasty goodness. Perhaps if they knew this savory French-style guacamole awaited them, more baguettes would survive to the front door!
Ingredients
- 4.000 4 ripe, Fresh California Avocados
- 1.000 1 Tbsp.fresh lemon juice
- 0.250 ¼ cupfinely chopped shallot
- 3.000 3 Tbsp.dry vermouth
- 2.000 2 Tbsp.chopped, fresh tarragon (or 1/2 that amount dried)
- 1.000 1 tsp.salt
Instructions
- Coarsely mash (DO NOT PUREE) avocados.
- Stir in lemon juice.
- Fold in remaining ingredients.
Serving Suggestions:
Spread on slices of toasted baquette.
Beverage Pairings:
Try with your favorite French wine.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
