A most delicious variaition on a crab cake

Ingredients

  • 1.000 1
    avocado
  • 1.000 1
    lemon
  • 1.000 1 tsp.
    chives
  • 0.500 ½ tsp.
    dill
  • 1.000 1
    egg
  • 2.000 2 Tbsp.
    mayonnaise
  • 1.000 1 Tbsp.
    dijon mustard
  • 0.750 ¾ cup
    italian seasoned bread crumbs
  • 1.000 1 lb.
    crabmeat
  • 0.000
    salt and pepper to taste
  • 0.000
    garlic seasoned olive oil

Instructions

  1. Chop avocado.
  2. Cut lemon in 1/2 and squeeze 1/2 over avocado.
  3. Beat egg, add mayonaise, mustard, chives, dill and 1/4 cup of bread crumbs.
  4. Add crab and avocado.
  5. Season with salt and pepper.
  6. Make into 6 patties.
  7. Dip in remaining bread crumbs.
  8. Heat oil and fry patties, turning once until browned.
  9. Use remaing 1/2 lemon to slice and garnish.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
