Duncan & Robert Abbott

Recipe Provided By the California Avocado Commission from a consumer submission
These aren't exactly recipes, but some of the ways I use California avocados: Avocado is a great addition to many sandwiches. Try a BLAT -- Bacon, Lettuce, Avocado, and Tomato sandwich. Add avocado slices to turkey or chicken and cheese sandwiches. Use avocado slices or guacamole as burger additions. Veggie Delight -- a slice of mild cheese (Jack, Muenster, Swiss), avocado slices, alfalfa sprouts, sliced cucumber, and tomato. Rich and creamy avocado makes mayonnaise unnecessary in many sandwiches. Place thin slices of ripe avocado on bread or toast surfaces and slightly mash and spread instead of using butter or mayonnaise before layering on other ingredients. A firm slice of wheat or sourdough bread with avocado slices, salt and pepper makes a delicious snack. Cut into quarters and garnish each with a cucumber or radish slice and a sprig of parsley or cilantro for party finger-food.
