This salad is good as a starter. With the tofu it's extremely healthy. The cucumber adds some crunch to what is otherwise very smooth. I sometimes add a few cherry tomatoes for color variation.
Ingredients

block momen (hard) tofu

cherry tomatoes (optional)
Instructions
- Peel and cut avocado into chunks
- Drain tofu and cut into (approx) cm or half inch cubes
- slice or chop cucumber
- cut tomatoes in half
- Mix all the ingredients together and serve on lettuce on individual plates.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
