Margarita marinated chicken, shrimp and veggies grilled till golden and full of flavour. Serve with rice and salad. Great for summer or anytime!

lg green and red pepper, cut into 1 inch chunks

zucchini and yellow squash , cut into 1 inch chunks

Marinade Ingredients:

olive oil

garlic- chopped

margarita mix

tequilla, optional if you desire non alcoholic version- use water

basil, oregano and rosemary- fresh and chopped
Instructions
- Prepare marinade: In medium size bowl combine the marinade ingredients. Add the vegetables, shrimp, avocado, chicken and toss gently. Refrigerate 2 hours. Remove from marinade and skewer in any order the ingredients. If using bamboo skewers, soak in water 2 hours.
- If u need to, use the marinade as a bbq sauce. Do not use it as a side dish of sauce without cooking it-to boiling.
- Serve with Rice and Salad.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
