This is one of my favorite company meals. I have served it for many years and everyone loves it. Try it....you'll like it.
Ingredients

shrimp, shelled and deveined

lime juice, divided

avocados, seeded and peeled and sliced 1/2 in thick

butter

shallots, finely chopped

tequila

whipping cream

hot red pepper flakes

celantro, chopped
Instructions
- In a bowl combine shrimp with 3 Tbsp lime juice, salt and pepper. Refrigerate 30 minutes.
- Cut avocados into 1/2 inch slices, Place in small bowl and coat with the remaining 1 Tbsp lime juice.
- Melt butter in skillet. Add shrimp and lime juice. Cook on high heat for 1 minute constantly stirring. Add shallots, tequilla, cream and hot pepper flakes. Cook briefly then add avocados and cook for one minute stirring constantly
- Transfer shrimp and avocados to serving plates. Boil sauce for about a minute.
- Add chopped celantro. Pour sauce over shrimp and avocados.
- Serve with rice
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
