Chicken breasts and Fresh California Avocados make a delicious sandwich.
Ingredients
- 0.000
Vinaigrette Dressing
- 0.333 ⅓ cupchicken broth
- 4.000 4 tsp.vegetable oil
- 2.000 2 Tbsp.lemon juice
- 1.000 1 tsp.Dijon-style mustard
- 0.333 ⅓ clove garlic, crushed
- 0.000
Sandwich
- 2.000 2 cupslettuce, shredded
- 2.000 2 boneless chicken breasts, cooked, skinned and shredded
- 0.333 ⅓ red onion, diced
- 0.333 ⅓ cupripe olives, thinly sliced
- 2.000 2 Fresh California Avocados, peeled, seeded and cubed
- 4.000 4 fresh pita bread rounds
Instructions
Vinaigrette
- In a mixing bowl, whisk all ingredients together until well blended.
Sandwich
- In a large bowl, combine lettuce, chicken, onion and olives. Just before serving, gently mix in avocado.
- Divide sandwich stuffing into equal portions and carefully spoon into pita bread.
- Before serving, generously drizzle vinaigrette dressing over each stuffed half.
Serving Suggestions:
Serve with a fresh fruit salad.
Beverage Pairings:
Try with a glass of Sauvignon Blanc or Viognier.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
