Luscious melted cheese and Fresh California Avocado combine in this super-easy appetizer.
Ingredients

ripe, Fresh California Avocado, peeled, seeded and diced

dash salt, optional

fresh Manchego cheese, sliced or shredded (or other cheese that melts well, such as Monterey Jack. Spanish-style aged Manchego cheese is not recommended.)
Instructions
- Place diced avocado in an attractive microwave-safe shallow bowl. Add a dash of salt, if desired.
- Top with cheese.
- Microwave on high power for two minutes.
- Serve with your choice of chips or bread for dipping.
Serving Suggestions:
Place California Avocado Queso Fundido bowl in the center of a round serving plate surrounded by crispy tortilla chips.
Beverage Pairings:
Try with a bucket of ice cold beer or iced tea.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
“Queso Fundido” means “melted cheese” in Spanish. A popular appetizer in Mexican restaurants, Queso Fundido is often served with chorizo sausage, which can also be added to this recipe.
