Ingredients
- 1.000 1 shallot, peeled and finely minced
- 8.000 8 Tbsp.unsalted butter
- 1.000 1 Tbsp.all purpose flour
- 1.000 1 Tbsp.baking powder
- 2.000 2 eggs, slightly beaten
- 1.000 1 lb.lump crab
- 3.000 3 scallions, thinly sliced
- 1.000 1 cupcorn
- 1.500 1 ½ ripe, Fresh California Avocados, 1 inch diced
- 1.000 1 lemon, zest of
- 1.000 1 Tbsp.chopped fresh dill
- 1.000 1 cupbread crumbs
- 0.000 salt & pepper to taste
- 0.000 oil for frying
- 0.000
Avocado Mango Sauce
- 1.000 1 cupmango puree
- 0.500 ½ cupripe, Fresh California Avocado, 1 inch diced
- 1.000 1 tsp.rice wine vinegar
- 0.000 salt & pepper to taste
Instructions
Avocado, Crab & Corn Fritters
- In a medium size sauce pot, heat oil to 375 degrees.
- In a small sauté pan, sauté the shallots in the butter until translucent.
- In a mixing bowl, mix the sautéed shallots with the remaining ingredients. Form into small balls.
- Slowly drop a few of the crab-avocado balls into the oil and fry until golden brown.
Avocado Mango Sauce
- Puree all ingredients in a blender and reserve for service.

Dont let it be bland!
Overall the recipe is good but I doubled the amount of shallots and added garlic powder and cayenne pepper to properly flavor the mixture. I would skip adding the avocados in the fritters and just use them in an avocado puree or avocado mango sauce.

Incomplete instructions
The instructions are incomplete. #1 refers to part of the list of ingredients. #3 is the first 2 ingredients, and I assume the last 4 ingredients are for the sauce.
If you follow your instructions-everything is in the blender and done. My question is, what goes into the blender?
