Ingredients
- 1.000 1 ripe Fresh California Avocado, seeded, peeled
- 4.000 4 tomatillos, husked, washed and very finely
- 2.000 2 scallions, white and some green parts, thinly
- 0.500 ½ bunch cilantro, chopped
- 1.000 1 Tbsp.minced jalapeño pepper, seeds optional
- 0.500 ½ tsp.salt
- 0.500 ½ tsp.freshly ground black pepper
- 0.250 ¼ cupfreshly squeezed lime juice
- 2.000 2 Tbsp.extra virgin olive oil
Instructions
- Combine all ingredients in a bowl.
- Cover and chill at least 30 minutes.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
