Instructions
Baked California Avocado with Crab
- Cut a small slice off the bottom of each avocado half so they are stable
- Mix crab with a Green Goddess Dressing, parsley, chives and chervil
- Divide the crab mixture evenly among the avocado halves
- Place filled avocado halves in a baking dish with a 1/2 inch of water. Bake at 300 degrees F until center is warm, about 20 minutes
- To serve, top each avocado half with even amounts of amaranth and place next to even amounts of grapefruit sections
Green Goddess Dressing
- Combine all ingredients in a blender; blend until smooth.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
