ripe, Fresh California Avocados, cut in half and seeded
Instructions
- Combine halibut, lime juice and salt together and let sit in the refrigerator until cured, approximately 45 minutes, drain well and reserve.
- Combine the coconut milk and lime juice in a small sauce pot. Smash the lemongrass with the back of your knife and add to the coconut milk with the ginger and bring to a simmer. Simmer for 20 minutes or until reduced slightly and thickened. Remove from the heat and let sit for 30 minutes to infuse, strain and chill.
- Combine the halibut, the coconut dressing, the onion, peppers, jalapeño, cilantro and salt in a bowl and mix well.
- Fill each avocado half with even amounts of the mixture and serve.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
